Low carb Chicken Tenders is a great addition in your day to day cuisine. Chicken tenders or Schnitzel can be found in every house and almost every restaurant in the Israeli Mediterranean kitchen. I love chicken tenders and my kids love it even more. It’s a great dish to serve for a family dinner or weekend lunch.

To make the original recipe I will need to use regular flour or breadcrumbs but I’m trying to avoid gluten. I decided to test a more low carb and gluten free version of the original recipe. So I created this low carb version and after a few trial and errors, I can say I found a great replacement for the chicken tenders.

In my low carb chicken tenders recipe, I’m using almond flour instead of flour (or breadcrumbs). I even replaced the whisk eggs and milk with a simple healthy olive oil (yes it works).

Serve this simple Mediterranean recipe for family dinner or weekend lunch. You can even make it as an appetizer in a cocktail party. I love to Dip my chicken tenders in mustard but you can use anything you like, ketchup, mayo, barbecue sauce, and even lemon taste great. Serve your kids a dish they will love that is healthy just don’t forget to use organic cage-free chicken.

To improve the taste of the coatings I mixed the almond flour with parmesan and spices.

prepare ingredients

1. Cut the chicken breast to the size you like I prefer them in small chunks but you can leave them as big chicken breasts
2. Pour olive oil to a bowl and dip the chicken breast in the olive oil for a few minutes.
3. in another bowl mix the Parmesan, almond flour and spices together.
4. Dip each chicken piece in the mix while heating a pan with grass-fed ghee

Fry the chicken

Fry the coated chicken pieces in the ghee on both sides until each side becoming a little golden and crisp. Serve hot with your favorite dip and enjoy
