This Raw Chocolate Ice Cream is outrageous. It’s raw, you can make it low carb and it’s so good. Kids are crazy for it. If you have kids you know that usually, they are not crazy about dark chocolate they prefer the sugary milk chocolate but this is different. This has now become my family and friends favorite dessert.
It’s really easy to make this, basically, this is sort of a chocolate truffle shortcut recipe. All I did is take mine famous raw chocolate recipe and add some heavy cream (which you can easily make at home with butter and milk) and put it in the freezer.
This recipe only includes 6 ingredients: organic cacao, raw cacao butter, coconut oil, vanilla, sweetener of your choice and heavy cream. If you can find a clean heavy cream at the store get it. A clean heavy cream doesn’t contain any preservative or ingredients you don’t understand. Otherwise, making your own heavy cream is really easy. You need 3/4 cup of full-fat milk (use organic milk or even better goat milk) and 1/4 glass of grass-fed butter. Carefully melt the butter cool it down and add it to the milk. Stir together well and you have high quality clean heavy cream.
To make the raw chocolate ice cream we need to melt the cacao butter and coconut oil. When melted, I add the cacao powder, vanilla, and sweetener. I used monk fruit to sweeten but you can also use high-quality maple syrup, you really don’t need too much. After stirring everything together I carefully pour about 1/4 cup heavy cream and stir it together. This will cause the raw chocolate to get thicker at this point you have 2 choices. You can make truffles by simply roll them into small balls and cover with cacao or put it in a small silicone mold tray and freeze it for a wonderful ice cream bites.
Unlike the raw chocolate, when making this recipe we can melt the chocolate in higher heat. Just remember, not too hot because you don’t want to cook it just melt). Because we keep it frozen it’s ok to heat in more than warm like heat to melt the cacao butter and coconut oil.
I know I can’t stop the kids from eating dessert I can’t even stop myself. But, I can make sure we are all eating better desserts that are actually healthy full of nutrients. In this recipe we use only raw ingredients, no cooking involved.
