This gluten-free Avocado & Bacon Pasta is an amazing dish and has a few options for vegans and for those on a low carb diet. All the options are delicious. Vegans remove the bacon and parmesan cheese and still enjoy creamy and healthy gluten-free pasta with avocado sauce. Those on low carb simply switch the gluten free pasta with zoodles and it’s still delicious and fun as a dinner.

In most recipes, you will see a twist for a pesto sauce with avocado which is great but i feel like the rich taste of the avocado is enough to make a simple dish with ingredients most of us have at home. This is a super delicious dish that takes 10 min to prepare. Pair it with a fresh salad and a glass of red wine and you have a romantic healthy dinner.

The bacon has a fabulous taste and it really works well in the dish but even without it, this is still a creamy and fun dish. To make the avocado paste i simply use a hand mixer and pulse the avocado with some olive oil, garlic, and lemon. i pulse and taste and add salt pepper and lemon until it tastes the way i want it. In the meantime, i heat the pasta. I use gluten-free pasta from quinoa or lentils and even pea. They are all taste great you can hardly feel the difference. If you’re following a low carb diet simply switch the pasta into zoodles it still works great and it becomes a perfect nutritious low carb meal.

1. Boil a pot with water
2. In a small mixer add the garlic, olive oil, and avocado and pulse until it becomes creamy. Add the lemon and pulse again. taste and add salt and pepper if needed
3. Boil the pasta of your choice but not too much so it still al dente.
4. Add the pasta the avocado on top and parmesan and serve.
