Sausages in rich low carb Mediterranean Tomato Sauce is great on its own and even better if served on cauliflower rice and a side of  Fried Spinach. Instead of the same boring sausage recipe, try this flavorful homemade recipe to get the Mediterranean taste.

The Spinach is an excellent source of vitamin K, vitamin A, vitamin C, and folate as well. It is also a good source of manganese, magnesium, iron and vitamin B2. You can also add mushrooms to the fried spinach.

For sausages use the kind you like we recommend merguez sausage. Cut them into bite size and fry in a pan using grass-fed ghee or olive oil.

When ready put them aside and add to the same pan onions if needed add a little more ghee. fry the onions for about 30 seconds or until they start to get a nice color. Add the tomato paste, like mutti pasta or cut your own cherry tomatoes and toss inside.

Add sour cream about 2- TBSP and another 0.5-1 TBSP mustard . Stir all together and add back the sausage. Keep cooking everything on a small heat for about 5 min

For fried spinach, crush the garlic and let it sit before you cut it for a few minutes. Cut the onions and mushrooms (optional) and wash the spinach

Warm up the pan and put the onions give it about a minute stirring and add the garlic and stir for another 30 sec and add the mushrooms (optional) salt and pepper and cook them until soften. Add the spinach to the pan and cook until wilted adding salt and pepper again. Take off the heat add a little balsamic vinegar and serve hot with sausages.
