I love adding broccoli to my food and this healthy broccoli salad is another great option. In addition to the health benefits, it is also super easy salad to make. Prepare the salad in no time and serve it for dinner or breakfast with the main dish.

I enjoy playing with this broccoli salad recipe and add some fun twist. First of all, I like adding pumpkin seeds and some nuts for a crunchy upgrade. Non-vegans try to add feta cheese, parmesan or mozzarella.

The Brocolli is from the cabbage family also known as cruciferous. If you ask me, broccoli is a superfood because the health benefits are outstanding

Broccoli health benefits:

  • Cancer-Fighting Properties – It’s simple math eating large amounts of cruciferous vegetables is linked to a lower risk of cancer. Mix you cruciferous and have some broccoli, cauliflower, Brussels sprouts, kale, turnip and also cabbage.
  • Improve digestion – Broccoli is naturally rich in fiber.  Eating enough fiber can prevent constipation, keep a healthy digesting tract and lower the risk of colon cancer.
  • Vitamin C – broccoli contains a good quantity of vitamin c. The vitamin c can help protect from sun damage and help your skin looks younger.
  • Improve Bone strength – Also Broccoli contains a good quantity of Vitamin K. Vitamin K is known to improve bone health by improving the absorption of calcium.

 

Warning: if you’re taking blood thinners such as Coumadin, consult your doctor or a nutritionist regarding the broccoli consumption because vitamin k plays a role in blood clotting.

The vegetables

1. Cut the broccoli florets and stems to size bites
2. Cock the broccoli in boiled water for 5 min
3. Wash the water in cold water to stop the cocking
4. Drain the broccoli and set it in the salad bowl
5. Cut the red pepper into stripes and the scallions. Add everything to the bowl

The dressing

1. Mix together the garlic, lemon juice, rice vinegar, mustard, salt, and pepper
2. Add the olive oil slowly while stirring until the dressing is getting thicker
3. Pour the dressing over the salad
Optional:
Add pumpkin seeds, nuts or cashew to give the salad crunchiness
If you're not Vegan you can add mozzarella, parmesan or feta cheese
