Cauliflower pizza is an amazing idea no doubt. If you’re anything like me i bet you tried to make low carb pizzas more than once. I bet it tasted bad most of the times or at the very best not a real replacement to pizza. I’m proud to say that after almost 2 years of failing attempts i finally have a cauliflower pizza recipe I’m proud of.

I have to give credit for the concept of this cauliflower crust to detoxinista who gave me the inspiration for the recipe. Their secret really makes the difference. In this Pizza crust unlike others we are squeezing out all the liquids of the cauliflower. In addition, we mix the dry cauliflower with soft goat cheese, I choose goat labneh. Labneh is a staple in many Meditteranean kitchens in Iraq, Jordan, Lebanon, Palestine, Israel, and Syria. You can use other soft goat cheese it will still work.

Another important fact about this low carb cauliflower pizza is that it’s really easy to make but it takes time cooking. So if you want pizza night minus the carbs and gluten this is the recipe for you to try. You can make a vegetarian version or non-veg depending on your toppings preference. For the pizza sauce, we made a simple delicious at home sauce you can see the recipe. Another quick and still good option is to take Mutti passata with some olive oil, just don’t buy a ready sauce.

Prepare the cauliflower crust

1. I grind the cauliflower and then moved it to a cookie bag and boiled it in hot water to soften the cauliflower (about 5 min). Alternatively, You can boil the cauliflower first and grind it after or buy frozen cauliflower and you don't have to boil it (you can also buy a ready crust).
2. Cut the veggies or prepare any toppings you like on your pizza.
3. After the cauliflower cooled off a little. Make a few holes using a toothpick in the cookie bag and start to squeeze all the liquids out. Get ready to squeeze a lot of liquids. Be careful not to tear the bag.
4. Move the dry cauliflower to a bowl and add the egg, goat cheese and any seasoning (we used oregano). Mix everything together preferably with your hands. It will not feel like an ordinary dough so don't worry.
5. Pour the batter on a parchment paper (it will be easier to flip it later) and start forming a round pizza crust look alike dough.
6. Put it in the oven at 400f (200c) for about 25-30 min until it gets a nice golden texture. Remove from the oven and flip it directly on the pan (it will not stick) and bake again until the 2nd side is becoming gold and crisp (another 15-20min)

1. When ready take the crust from the oven and add the pizza sauce, cheese (we used buffalo mozzarella) and toppings (we used onions, kalamata olives, and anchovies)
2. Bake for about 5 min until the cheese melted and serve a delicious low carb pizza
