My Gluten Free Teff Flatbread is my version for a healthy Mediterranian flatbread or pita. The teff is loaded with fibers, manganese, iron, calcium and a good source for protein and it’s also gluten-free. A few less known benefits of the Teff are:

The teff is native to Ethiopia.  The teff is a crucial and important part of Ethiopian food. The Ethiopian bread called, Injera, is made from teff and it’s the base of all their meals. Although Ethiopia is known for the teff, it is also grown in India, Australia and even a few states in the USA.

Nowadays health stores and even online store sell teff flour and it’s easy to find. It’s also super easy to make this flatbread teff recipe. It takes about 5 minutes and you have a healthy flatbread that pairs well with butter, avocado and even to dip in Shakshuka. The inspiration for this recipe was taken from the blog low tox life.

Some will say that it’s an acquired taste, but, since my kid loves this flatbread teff recipe i think you will love it too. The secret to making this a great flatbread is to keep frying the teff batter until it gets a nice color and getting crisp. Once it’s crisp on both side i take it out and eat it while it’s warm.

When i make the teff bread i use coconut oil but it has a wonderful taste when using ghee too (or butter).

1. Add all the ingredients to a bowl except 1 TBSP of oil to keep for frying and stir well to combine everything together. Let it sit for 2 minutes
2. Warm up a pan with the remaining ghee or coconut oil

1. Add the batter to the pan and fry it on the first side at list 2-3 min and flip.
2. Do the same on the other side. Touch the bread carefully if it's soft it needs more cooking if it's crispy it's good.
