1½ pound stemmed and quartered Tomatoes
1/2 thinly sliced Red Onion
1½ cups pitted and halved Kalamata Olives
1/4 cup chopped Italian Flat-Leaf Parsley
2 pitted and cut into chunks Avocado
2 pitted and cut into chunks Feta Cheese
1/2 cup Extra-Virgin Olive Oil
1/2 Cup Red Wine Vinegar
2 peeled and minced Garlic Cloves
1 Tablespoon Oregano
1 Teaspoon Kosher Salt
1 Teaspoon Freshly Ground Black Pepper

Combine the cucumbers, tomatoes, red onion, kalamata olives and parsley in a large serving bowl. Set aside avocado in a small bowl

Combine the olive oil, red wine vinegar, garlic, oregano salt and pepper in a small canning jar. Top with the lid and shake well until blended and emulsified. Season with more salt and pepper to taste.

Put 1 tablespoon or so of the dressing on the avocado and gently mix to coat.
