Directions
The yellow lentils patties are my go-to recipe when I try to strict my meals to vegetarian only. Don’t get me wrong this is a super tasty and very healthy recipe. It’s great as part of a vegetarian dinner. All I need is to add one of my healthy salads and I have a perfect dinner. Before I prepare the lentils patties I sprout the lentils. It takes 3-5 days the sprouting process so you have to take that under consideration.
The reason I sprout the lentils is that the Lentils contain phytic acid which can be difficult to digest. Sprouting will naturalize the phytic acid and help your body absorb more vitamins and minerals. In addition, sprouting produces vitamin c.
Once the lentils are sprouted, theoretically you can eat it raw, however, i prefer to cook it until it softens for about 20-30 min.
Although, not a low carb dish this is a healthy dish that contains chickpea flour and zucchini for a great Mediterranean dish.
