Directions
The Sweet Potato in Pesto sauce is a great side dish that all the family loves to eat. I mixed the pesto sauce with butter to give it even more creamy taste you just can’t resist. It’s a perfect dish that is not low carb, however, if you need to get out of the ketosis this is probably a great dish to have.
Sweet potatoes are not only tasty they are also very healthy. They are a rich source of fiber and contain vitamins and minerals like iron, calcium, selenium. In addition, they’re a good source of most of our B vitamins and vitamin C. On top of all of these benefits sweet potatoes have key nutritional benefits, they’re high in beta-carotene an antioxidant.
Although cooking the sweet potato seems to reduce the beta-carotene it seems to increase the vitamin c and offers many health benefits.
The combination of sweet potato in pesto (see our pesto recipe) and butter sauce in the oven gives us an incredible taste. I recommend preparing this as a side dish to steak, chicken liver or baked fish.
It takes 45 min – to an hour to make this dish. First, you need to peel the sweet potato and cut it to strips (or cubes if you prefer). put them in olive oil, salt, and pepper and to the oven for 45 min. While they cook simply prepare the pesto and mix it with the butter. When the sweet potatoes are ready (soft and yummy) pour the pesto on top and serve. You can also cook it with the pesto, however, I prefer not to.
