Chicken Liver with Mushrooms and onions is one of my favorite dishes for a weekend lunch. Serve it with a side of sweet potato puree and some raw vegetables for a pure Mediterranean flavors meal. You will be surprised but even kids like this dish especially the sweet potato puree.

I really love adding the mushrooms to the dish because the mushrooms are getting fabulous flavors. The mushrooms soak all the flavors from the fried onions and the liver. If you don’t like mushrooms, you can try our chicken liver with onions recipe. On this specific recipe, I used king mushroom or it’s scientific name Pleurotus eryngii. I love the taste of the king mushroom in this dish but really any other mushroom could work well and will give it the real Mediterranean feel.

Make sure you get a liver from a cage-free chicken who fed with organic natural food without antibiotics. A lot of people ask if the chicken liver is healthy? Although it is high in cholesterol it is also a great source of iron, folate, Vitamin a and b12 and protein.

1. Cut the onions into halves and then strips. Cut Mushrooms. Wash and clean the liver carefully
2. Heat the oil in a pan and fry the onions until they are almost golden to lightly browned.
3. Add the Mushrooms to the onions

1. Add the liver to the pan (if you prefer, you can also grill them first). Sear them on all sides
2. Add the spices, then continue frying until completely cooked (avoid drying them out too much). Serve hot.
