1/4 Cup Olive Oil
1 coarsely chopped Onions
1 Green Chili Pepper or Red Chili Pepper
1 clean chopped to cubes Red Pepper
Salt
Pepper
3 chopped to dice big Ripe Tomatoes or Cherry Tomatoes
4 TBSP Lemon Juice
20 Basil Leaves
Chicken Marinade
3 TBSP Olive Oil
3 TBSP Lemon Juice
2 Garlic Cloves
1 Rosemary Leaf Optional
1 Fresh Thyme Leaves

This Mediterranean chicken and veggies is a classic dish that is perfect for a family lunch or dinner. The entire dish is made in one pan for an easy full of flavors meal. Cooking everything together soaks the tastes and you get a real classic chicken recipe that even kids love. This dish goes perfectly with a side dish. To keep it a low carb Mediterranean meal try cauliflower rice or zoodles as a side dish. If you still want a healthy meal but not necessarily low carb, try the vegetable buckwheat as a side dish.

Let the chicken sit inside the marinade for an hour or even more. It will soak great flavors.

To keep this as a really healthy meal, make sure you’re chicken is grown cage free without hormones or antibiotics.

1. Cut the chicken into cubes
2. Mixed all the ingredients for the marinade and add the chicken. Let it sit for an hour or more in the marinade
3. Cut the veggies

1. Heat the olive oil in a big pan and
2. Fry the chicken while stirring for 2 min until the chicken turns white. set aside

1. In the same pan add the onion, peppers, season with salt and pepper and fry for 3 min
2. Add the tomatoes and fry for another 1 min.

Add the chicken back to the pan and stir. add lemon juice and bring to boil and cook for 1 min. Add the basil stir and serve.
