The Green Shakshuka or Spinach Shakshuka is now one of my favorite Mediterranean dinner dishes. For years I would only eat the traditional Shakshuka but not anymore. This green Shakshuka is so tasty and super easy to make. 5 minutes work and you have dinner (or breakfast) that feels like you’re in a restaurant. I don’t use bread with the dish only a salad with avocado. If you want a side of bread but still keep the meal gluten-free, you should try these fantastic buns.
Making green shakshuka could not be easier. There are only a few ingredients and they cook quickly. To make the dish you only need leeks, garlic, spinach, cherry tomatoes, eggs, salt, ground black pepper, feta cheese, and olive oil. You can also use ghee instead of olive oil or a mix of both.
Start by crushing the garlic, cut the leeks to small slices and clean and dry the spinach. Heat the olive oil in a skillet and add the leeks. Cook them until softened but not golden. When ready add the spinach garlic and cherry tomatoes. Cook for about 5 min until the spinach is wilted and add salt and pepper. Make sure not to add too much salt because the feta cheese also ads a lot of salt.
Makes small holes and break the eggs into them carefully. Cook the eggs to your liking. I like to cover the skillet while the eggs are cooking. When ready add the feta and serve immediately.
That’s it the green shakshuka is super easy to make, it’s a really healthy dish that is low carb. A true perfect low carb Meditteranean dish you should try at home. Don’t be afraid to try and make it at home. This is one of the easiest dishes you can make at home and it taste so good it will surprise you.
