1/2 kg Ground Chicken Breast
400 g Baby Spinach Washed and dried
1 Onions
1.5 TBSP Fresh Ginger
1 Organic Cage Free Egg
~1/2 glass Almond Flour
1 TSP Koshar Salt
1/2 TSP Freshly Ground Black Pepper
Cilantro seeds
Tahini Yogurt
1/4 Glass raw Sesame Seed Paste (Tahini)
3 TBSP (or greek yogurt) Organic Goat Milk Yogurt
1-1.5 TBSP Lemon Juice
2-3 TBSP Ice Water

This Spinach and Chicken Patties (Yogurt Tahini Sauce) is a truly healthy Meditteranean recipe. If you’re not a big chicken fan this recipe might change your mind. It’s a perfect dish for the keto and low carb Meditteranean diet.

There are 2 ways to make the Spinach and Chicken patties. The first one is to blend everything to get a consistent blend and the second one (and my favorite choice) is to cut everything coarsely so every bite is different.

The ingredients needed for this Yogurt Tahini Sauce recipe: Patties: Organic free-range ground chicken breast, spinach, grated onion and ginger, almond flour, egg, salt, pepper, oregano. Tahini Yogurt: Raw tahini, yogurt, lemon juice, cold water, salt, and pepper.

To make the Spinach and Chicken patties:

Start by cleaning the organic spinach and soak them in boiling water for about 3-5 min. Dry them well and add them to a pot along with the rest of the ingredients. If you have time let it sit together in the fridge for 60 min. With wet hands make patties from the mixture and cook it with ghee and olive oil.

To make the sauce:

Take the raw tahini and add cold water. stir well until you get the desired paste. add the lemon, salt, pepper, and the yogurt and mix everything together. Taste and improve seasoning if needed.

Making the chicken balls

1. In a bowl add spinach and hot water and poach it for a minute. Wash in cold water and strain well.
2. Cut the spinach and strain again. Move it to a dry bowl
3. Using a greater, greate the onion and ginger to the bowl.
4. Add all the meat blend ingredients and stir way preferably with your hands.
5. If you have time let it sit in the fridge for about an hour
6. Make a nice round ball shape but not to thick and cock in olive oil until it gets a nice color on each side

Making the Tahini Yogurt

1. Stir the Tahini paste, yogurt, lemon juice, and water until you get a thick and smooth blend.
2. Add salt and pepper to taste and serve with the chicken balls
