In a time of lockdown and the COVID-19 pandemic leaves us at home we all need some sweet treats so why not healthy Nutella? We are locked at home and we cook a lot but the kids and adults too need some sweets.

When I was a kid I loved Nutella and a few months ago my kid told me he never tried Nutella and he wants me to buy him. Of course, i first checked the ingredient list and i was shocked. The main ingredients of Nutella are sugar and palm oil! more than 50% of it. That was enough for me to understand that a store-bought Nuttela will not get into our home and i need to make my version of healthy Nuttela.

 

I can tell you how I experiment and try many recipes but the honest truth is that it was so easy to make a super tasty healthy Nutella. My kids love it and that says everything! My Nuttela Has only 4 or 5 ingredients (you’ll see in a minute). Instead of buying industrial Chocolate spread that is full of sugar and loaded with carbs, you can make a low carb version easily that is also suitable for vegans. Hazelnuts are so delicious that there isn’t much you need to add to them to make it tasty.

Preparation:

The ingredients for a  healthy Nutella are hazelnuts, raw unsweetened cacao, vanilla extract (optional), sweetener of your choice. I experiment mostly with monk fruit and also tried maple syrup.

To make the spread follow the steps:

Step 1: Toast the hazelnuts

Set the hazelnuts in a single layer on a parchment paper and insert it to a preheated oven 360f/175c for 10-12 min. This helps extracts the oils from the nut and makes it easier to peel the skin. Let it cool down completely. Once cooled peel all the remaining of the loose skin and place the nuts in a blender.

To peel the loose skin simply fold the parchment paper with the hazelnuts inside and toggle it all together to help the skin get looser. Now, most of the skin suppose to break and you can move the hazelnuts to the blender and peel the ones that still have their skin on.

Step2: Blend the hazelnuts

Blend the nuts in a blend or a food processor for about 3 min. From time to time use a spatula to scrape the bottom and sides. Keep blending well until the hazelnuts become creamy and smooth.

 

Step 3: Add remaining ingredients

Once the hazelnut is smooth and a little wet it’s time to add the cacao powder, vanilla extract and the sweetener of your choice. Be careful with the sweetener if you ask me a small teaspoon is enough. Add a little bit bend everything together carefully and taste. Now you just have to transfer it to a jar and enjoy the chocolate healthy Nutella spread.

I don’t post a lot of dessert recipes. I only post the ones that i think they are must like the homemade chocolate. This healthy Nuttela is a must since i started making it we always have at home because it’s addicting but at list healthy addiction.
