2 Garlic Cloves 1-2 cloves
1 Red Chili or use red chili powder
Hand Full Cherry Tomatoes
12 pieces Shrimp about 6-8 pieces per person depending on the size
1/2 Glass White Wine
1/2 Lemon

Shrimp scampi is so easy to prepare and yet so delicious. This is a perfect dinner for low carb diet as we use the zoodles to replace the traditional pasta. Super easy and super quick you’ll have an impressive meal ready in less than 30 min.

CUT THE ZOODLES

Take a spiralizer and make long (but not too long) zucchini strips (same as pasta)

Heat olive oil (on low heat) and add the garlic and red chili. leave it for about a minute until it's starting to get a little color but not burnt

ADD THE SHRIMP

Add the shrimps to the skillet and fry them until they turn a beautiful pink like color.
Add the halved cherry tomato and let it cook with the shrimps

ADD WHITE WINE

After the shrimps are pink and the tomatoes soften pour in half glass of white wine and let it reduced
Squeeze half a lemon on top and stir

ADD THE ZOODLES

With the zoodles you have 2 options:

1. Cook them with olive oil on low heat for a minute or two until they softened a little (but not too much) strain the water and add to the shrimp's pan
2. Add the zoodles directly to the pan stir in with the sauce for a minute or two and serve with Parmesan cheese on top
