These Zucchini Bacon Fat Bombs are so delicious you can’t even imagine. As someone who is trying to follow a low carb Meditteranean diet, I need fat bombs. Usually, when the afternoon hunger starting to kick in I go for my raw chocolate but I wanted a savory treat too. I found the inspiration for this recipe on the bulletproof blog.

I took the recipe and gave it a little more of a Meditteranean fusion feel to it. We are talking about a wonderful pastured raised bacon mixed with zucchini, onions, coconut flour, eggs, cumin, and some turmeric. Trust me it’s super easy to make and so delicious.

To make the Zucchini Bacon Fat Bombs i fried the bacon and then the onion in the bacon’s fat to get extra flavor. When I finished with the bacon and onions I cut the bacon and add it along with the onions to a bowl with the rest of the ingredients. Mix everything together and moved it to a muffin baking sheet. I cook it for 35 min and when it got a nice color outside and ready in the inside i let it cool off a little on a rack. I served it with greek yogurt and some veggies on the side and my afternoon fat bomb became my dinner :).

1. Fry the bacon on medium heat on both sides and preheat the over to 350f (170c)
2. When bacon is crisp but not too crisp remove from pan and uses the leftover fat oil to cook the onions until they are changing the color to light gold.
3. take a big mixing bowl and combine all the ingredients. Mix together well until everything is mixed.
4. Scope the batter into a backing muffin tray (you will have 5 or 6 muffins)
5. Bake for 30-35 min until it gets a nice color and ready inside.
6. Let it cool a little and serve it with Greek yogurt.
