I love cauliflower rice. It’s the perfect replacement for those who keep low carb diet. Cauliflower rice is super easy to make and it’s almost perfect replacement to the high carb side dishes. You can make it a plain dish or add some veggies like frozen peas for extra flavors. Use the cauliflower rice with dishes like the Mediterranean Chicken in Pesto and Olives or the yellow curry to enjoy the taste of the main dish sauce over the cauliflower.
It takes only 2 min to prepare the dish and 15min of cooking on the stove. You can use grass-fed ghee or coconut oil for frying. To adjust the flavors to your main dish yellow curry works perfectly with coconut oil.
