    If you’re eating low carb you’ll need to substitute the empty carbs like rice or pasta. Lickly cauliflower rice is one of those easy to make and it’s almost perfect replacement to the high carb side dishes. Use the cauliflower rice with dishes like the Mediterranean Chicken in Pesto and Olives or the yellow curry for a complete full meal that is low on carbs.

    The cauliflower rice is super easy to make. It takes 2 min to prepare and 15min cooking on the stove. You can make it using grass-fed ghee or coconut oil to adjust the flavors to your main dish (yellow curry works perfectly with coconut oil cauliflower rice).

    Grate the cauliflower

    Wash and thoroughly dry organic cauliflower, remove all green and grate using a box grater or pulse in a food processor

    Cook and season

    cook the cauliflower with organic grass fed ghee or coconut oil for about 15 min until it's getting soft, stirring occasionally. Just before the end of the cooking season with salt, pepper and turmeric cook for another 30 seconds and take it off the stove. Let it sit in the pot for another 10 min garnish with fresh chopped parsley and serve
