This cauliflower toasts patties with avocado and eggs is the perfect low carb breakfast, brunch or dinner. It’s tasty, easy to make and best of all it’s easy LOW CARB. make your own low carb brunch with these cauliflower toasts. You’ll love it!

To make the patties we are using the best healthy fats ghee and avocado. You can make a vegan version of this just leaving the egg away and it’s still delicious.

This is a healthy dish based on cauliflower and avocado. I love avocado and i can eat it at any meal. I even make avocado desserts because it’s such a perfect healthy fat.

Grate 1/2-1 floret depending on the size (usually 1/2 will be enough for 2-4 patties).
Mix the grated cauliflower with 1 egg salt and pepper.

Make an avocado salad. There are a few option and you should make your favorite blend. You can mix it with mayo and lemon, salt and pepper or without the mayo. You can also mix an egg in it but since we use eggs already you might want to skip it.

Heat ghee in a skillet and pour in the middle of the skillet the cauliflower mix. Fry it until it's getting brown color and flip.
In a separate skillet fry sunny side up eggs

Combine the cauliflower toasts on top of it the avocado salad and the egg
