2 -3 cups Spinach
1-2TSP Balsamic Vinegar
2 TBSP Extra-Virgin Olive Oil
1 TBSP (or just olive oil) Grass-Fed Ghee

    The Halloumi and Spinach with Mushrooms is another great low carb Mediterranean side dish. It’s a great healthy addition to your lunch or dinner. With garlic, you can expect great Mediterranean flavors.

    The spinach is a superfood rich in nutrients and the mushrooms are also very healthy and packed with fibers, antioxidants, and nutrients.

    The Halloumi and Spinach with Mushrooms is not just another vegetarian side dish it’s also very healthy and so yummy. Oh, and I forgot to mention it’s so easy to prepare it. You can have this as a nice light dinner with a healthy salad or as a wonderful side dish to a fish or the Greek Chicken in Yogurt and Lemon.

    1. Crush the garlic and let it sit before you cut it for a few minutes.
    2. Cut the mushrooms and Halloumi to cubes
    3. Wash the spinach

    1. Heat up in a big pan the oilve oil and ghee and toss in the garlic and halloumi when ready. Stir well
    2. After about 1 min add the mushrooms and stir everything together
    3. When the mushrooms are softened add the spinach and olive oil.
    4. Stir everything until the spinach completely wilted
    5. Salt and pepper again and add the balsamic viniger. Stir together and taste if needed add more vineger or serve hot.
