Directions
Hummus, this Mediterranean healthy vegan fast food dish, is now popular all over America. This dish is a low carb vegan twist to the original recipe. We replaced the chickpeas with mashed cauliflower and we also ditched the traditional pita bread and served this dish with veggies. Dipping a stick of cucumber or kohlrabi in the Hummus is an amazing replacement to the high carb pita bread. The rest of the ingredients for the Hummus are the same.

PREPARE THE TAHINITo make enough Tahini for a whole cauliflower head you will need about 4 to 5 TBSP of Tahini paste. Pour the paste to a bowl. Add ice water (the ice water give it the beautiful white texture) about 3-4 TBSP and start mixing together. Add more water if needed and keep stirring until you get one thick paste. |
