Hummus, this Mediterranean healthy vegan fast food dish, is now popular all over America. This dish is a low carb vegan twist to the original recipe. We replaced the chickpeas with mashed cauliflower and we also ditched the traditional pita bread and served this dish with veggies. Dipping a stick of cucumber or kohlrabi in the Hummus is an amazing replacement to the high carb pita bread. The rest of the ingredients for the Hummus are the same.

20-30 minutes

BOIL THE CAULIFLOWER

Cook the Cauliflower in boiling salt water until it has soften completely. It should take 20-30 min

MASH THE CAULIFLOWER

When ready, strain the water and mash the cauliflower until it gets a soft texture like a mash potato.

PREPARE THE TAHINI

To make enough Tahini for a whole cauliflower head you will need about 4 to 5 TBSP of Tahini paste. Pour the paste to a bowl. Add ice water (the ice water give it the beautiful white texture) about 3-4 TBSP and start mixing together. Add more water if needed and keep stirring until you get one thick paste.

SEASON THE TAHINI

The secret to a tasty Tahini is the seasoning (you can eat the tahini as a stand alone dish and even add it to a salad). Add 1 minced garlic clove, salt to taste and plenty of lemon. Lemon is a key here. Stir everything together and taste. fix seasoning if needed.

MIX CAULIFLOWER AND TAHINI

Add the Tahini to the Cauliflower and mix together. Spread it nicely on a plate and add Paprika and Olive oil and serve. The taste should be like a real hummus.
