I love seafood and especially this low carb Mediterranean Shrimp Veggies. A combination of all the good in the world fresh vegetables and shrimps. It’s so delicious and easy to make. Try this and you’ll feel like you’re on the beach in Mykonos or Tel Aviv enjoying the Mediterranean flavors.  This is a perfect dish for those who are keeping a low carb diet. Healthy and full of nutrients.

The Shrimp Veggies has wonderful lemon flavors that match perfectly to the shrimp. Adding a bit (or a lot) of chilli flakes gives it a little spicy taste to make it just perfect. Lots of fresh organic vegetables like broccoli, zucchini, onion, garlic, carrot, ginger, mushrooms, green peas and some tomatoes to balance the taste with some sweetness. Although the  Mediterranean Shrimp Veggies can be a complete dish you can also add a side dish of cauliflower rice or the Moroccan chard leaves to make it a low carb meal.

Feel free to make changes to the vegetables replace some or add new ones like red pepper, you can really go crazy with the vegetables.

1. Heat on medium heat stove the grass-fed ghee and olive oil.
2. Add onions, broccoli, mushrooms, garlic and grated carrots. Close pot lid
3. After a few mins when the veggies get softer add the rest of the veggies. close the pot and keep cooking for 5 min.

1. Move the veggies to the side and add the Shrimps.
2. Add the paprika and chilli powder on the Shrimps
3. Let the Shrimps grilled for a little more and flip them to get nice reddish color on both sides. add the turmeric ghee and black pepper. Mix everything together
4. Add the lemon stir and coriander. let it cook for 10 min
5. Add the green pea cook for another 1 min stir well and serve hot
