My Chicken Breast in Lemon and Oregano Marinade is the entire family favorite dish. The Chicken and lemon blend are a perfect match. When we add the oregano the dish is just delicious. When I serve the lemon chicken, I pour melted homemade garlic butter to make it a perfect paleo dish. If you’re looking for a low carb meal, pair the chicken with fried cabbage.  This can also be perfect for a family lunch or dinner.

When buying a chicken it’s important to get pasture raised or free range chicken. Pasture raised chicken get a significant portion of their nutrition from an organic source. In addition, they are free to walk around the pasture. Pasture chicken has a mobile coop where they stay at nights. Unlike the pasture-raised chicken, conventional farming is using a lot of antibiotics. Did you know that 80% of the antibiotics sold in the USA are used for livestock and poultry? In addition, factory farmed chicken feed often includes caffeine (to keep them awake so they can eat more), arsenic (to make their flesh pinker and combat infection), and the active ingredients in Benadryl, Tylenol, & Prozac (to counteract stress, which makes the meat tough).

The Chicken Breast in Lemon & Oregano Marinade

When adding the Chicken Breast in Lemon & Oregano marinade I recommend to let it soak in the marinade for at list 30 min and up to a day. The more the chicken soak in the marinade the better the taste. Simply put the chicken and the marinade in a resealable bag, mixed it together and let it sit in the refrigerator. I used garlic powder for the marinade but if you don’t have it at home you can use a minced garlic clove.

Garlic Butter

For the garlic butter, depending on the weather, you can leave it outside for 30 min and let it melt. You can also put it in a warm oven or microwave for 1-3 min. When it’s starting to melt, add the garlic powder and the salt and stir together. I like to use high-quality Himalayan salt.

Paleo Dinner

This Chicken Breast in Lemon & Oregano is really a perfect dish for our low carb Mediterranean diet. It has a good amount of high-quality fats. We used grass-fed butter and extra virgin olive oil. For a complete paleo meal, pair it with a side of fried cabbage or baked cauliflowers and you have a delicious meal.

I think it’s important when you’re following a low carb diet to make sure you eat only high-quality fats. Also, make sure you cock with the right fats. Not all fats created equally. I prefer to cock with fats that have a high smoking point like grass-fed ghee or hump fat and use olive oil or avocado oil for dressing.

1. Take a cooking bag or a resealable plastic bag and add the chicken, olive oil, garlic powder, oregano, and lemon juice. Mix everything together and put in the refrigerator for at least 30 min (you can also leave it overnight) so the chicken can soak the marinade taste
2. Mix the butter with the garlic powder and salt and melt it on low heat. You can do it in the microwave or oven for a few minutes (if it is hot simply let it melt outside)

1. Heat olive oil in a pan and add the marinated chicken and the marinade leftovers. Cook well on both sides, about 5 min per side
2. Serve hot and pour the melted butter on top just before serving.
