Tahini, or sesame seed paste, is a staple of Middle Eastern and Mediterranean cooking. It’s perhaps most notable for its essential role in making hummus, although its uses go far beyond that iconic dip.

Add half a cup of good quality store bought organic tahini paste and a few drops of ice water and stir slowly (the ice water gives the tahini a beautiful white shade). Add more water as needed until you get the thick but smooth texture.

SEASON THE TAHINI

Add 1 minced garlic, salt to taste and lemon (at least 1/2 lemon and maybe more). Stir all together and taste.
