This black lentils patties with Zucchini is a great vegan dish that you can serve for dinner or lunch. It’s gluten-free. Before I made this dish I sprouted the lentils. I wrote already a post on the benefits of sprouting. I made a habit to sprout every week, so I can always use the sprouts in my salads or dishes I make.

This is a fairly simple and quick recipe. You need to cock the lentils before to soften them and then just pulse them in a hand mixer. When the lentils are ready just add the rest of the ingredients and season well. If you’re not serving this to Vegans you can also add an egg to the batter to make it easy to form the patties.

These black lentils patties are super healthy and delicious, they are packed with nutrition value and can serve as an excellent dinner with an organic salad on the side. Serve the black lentils patties with greek yogurt it tastes so good together (as long as you’re not following a vegan diet).

1. Cook the lentils in water for 20-25 min with a little bit of olive oil and optional 1 TSP cumin
2. Grind the lentils in a hand mixer
3. Mix all the ingredients together except the ghee and olive oil

1. heat a mix of grass-fed ghee and olive oil (you can use only one of the oils too)
2. Form patties and cock them in the oil about 5 min each side or until cooked
Serve with greek yogurt
