1 head Cauliflower
1.6 oz (50 gram) Unsalted Butter
4 Spoons Olive Oil
1 tablespoon Atlantic Sea Salt
Black Pepper
Tahini Ingredients
1/2 glass Sesame Seed Paste (Tahini)
1/2-1 squeezed Lemon
1/4-1/3 glass Ice Water
1/2 teaspoon Atlantic Sea Salt
1/2 teaspoon Black Pepper
2-5 fillets Anchovies in Olive Oil

    This super healthy Mediterranean side dish is loved by everyone (yes even kids). It’s super easy to make and tastes like no other. It’s a perfect side dish for fish and meat. If you don’t like anchovies you should still try this recipe because the anchovies taste is not taking over it’s just a refreshing addition.

    Putting aside the amazing taste of Thini with anchovies, there is a great health benefit by combining Tahini and anchovies because while Tahini is rich in omega 6 Anchovies are rich in omega 3 which help to balance between the omega 3/omega 6 ratios.

    20-25 minutes

    BOIL THE CAULIFLOWER

    Place the entire cauliflower in a large enough pot with pre boiled water with a tspn of high quality atlantic sea salt. Cover the pot and boil for 20-25 min or until soft

    ADD SEASONING

    Carefully take the cauliflower from the pot strain the water and put it on a baking sheet. Pre-heat the oven to 430f (220c) and stick unsalted butter cubes (or organic grass fed ghee) between the cauliflower florets. sprinkle olive oil, salt, and pepper to taste and put in the oven for 25-30 min or until baked

    PREPARE TAHINI

    Add half a cup of good quality store bought organic tahini paste and a few drops of ice water and stir slowly (the ice water gives the tahini a beautiful white shade). Add more water as needed until you get the thick but smooth texture.

    SEASON THE TAHINI

    Add 1 minced garlic, salt to taste and lemon (at list 1/2 lemon and maybe more). Stir all together and taste

    ADD ANCHOVIES

    Add 2-4 pieces of high-quality anchovies (preferably in olive oil) and with a hand mixer blend it to the tahini

    SERVE

    Take the cauliflower out of the over when ready and pour the anchovies tahini on top. Serve immediately
